LA DIGESTION

Aujourd’hui nous savons que la digestion est un processus complexe. Très brièvement, les aliments sont d’abord broyés et humidifiés lors de la mastication. Dès ce stade, les glucides commencent à être dégradés par les enzymes de la salive. Une fois avalée, la nourriture descend rapidement le long de l’œsophage.

Dans l’estomac, les contractions brassent le bol alimentaire et le mélangent au suc gastrique. Ce brassage et les enzymes de l’estomac produisent une sorte de bouillie liquide qui pénètre dans l’intestin grêle. Le suc du pancréas et la bile achèvent la digestion et permettent l’assimilation des nutriments. Les éléments non assimilés passent dans le gros intestin, où l’eau et les sels minéraux sont absorbés par l’organisme. Et enfin, les déchets sont évacués par l’anus.
